Verify Debezium connector can be used with MongoDB Atlas

It should work in theory, in particular as we use change streams since Debezium 1.8. One question though is the oplog access still needed for safely transitioning from snapshotting to streaming, and whether that's possible with Atlas. We should update the documentation with our findings. If it "just works", then still a sentence on that would be good to have in the connector docs.
