Support matrix jobs on CI to test against multiple Vitess versions

Right now we are only targeting the latest Vitess version. We should try to test multiple version of it if possible

If you think we do should test against specific older versions too (e.g. in case there's a designated LTS version which will be supported for a longer period of time by Vitess folks), we'd have to update the Vitess connector CI job config accordingly.
