Incremental snapshot is failing when launched right after or during a schema change

This issue is a follow-up to DBZ-4272.

Further steps are necessary as the schema migration is more complicated - synchronization with change table switch.

Currently the code will end-up in an exception but the case could be identified via a log messages introduced in io.debezium.util.ColumnUtils.toArray(ResultSet, Table).
