Suport all charsets in MySQL parser

      MySQL parser requires charset names defined as tokens. Not all available charsets are currently supported by the grammar.

      The list of all MySQL supported charsets is available at https://dev.mysql.com/doc/refman/8.0/en/charset-charsets.html andd its subchapters.

      The test should verify the charset itself and one of collations.

      This is follow-up to DBZ-4246.
