Remove the reference from connectors/index.adoc about Db2 connector being in Incubating state

      DBZ-2814 removed statements in the Db2 connector doc about the connector being in an incubating or Tech preview state. However, in the Connectors Overview topic (connectors/index.adoc), the entry for the Db2 connector in the list of connectors indicates that the connector is Incubating.
