Update snapshot.mode options in SQL Server documentation

    Description

      The SQL Server documentation for snapshot.mode:

      • Does not reference the option schema_only
      • Should not reference or at the very least should specify that initial_schema_only is deprecated and scheduled for removal for community documentation only.

      For 1.0/1.1, we should probably add schema_only and use ifndef conditionals for cdc-product.
      For 1.2, we should likely remove initial_schema_only entirely.
