After recent koji migration, we realized that the existing odcs roles for ansible and CentOS Stream infra are really not reflecting the current situation.

For example, odcs will always try to fetch latest pkg from epel repository and it broke odcs.

We should refactor the role (and ideally test this somewhere ?) to ensure that it's pinned to a specific version (tested and known to be working)
