Upgrade our monitoring stack from Zabbix 6.0.x LTS to 7.0.x LTS

      While Zabbix 6.0.x LTS is still supported, it would be good to start rebuilding zabbix 7 into infra tags, for all architectures we support/maintain (x86_64, aarch64, ppc64le and s390x).
      Let's investigate first in -testing tags and so for .stg. env, that itself will be reinstalled with either el9 or el10.
      That will mean if we need ansible role adjustments, they'll be done in time for when DC move will happen, and so do that in sync, so that new zabbix server (and proxies) will be deployed with Zabbix 7 (and clients automatically upgraded by ansible after)

      Some things to consider :

      • migrating first (for our own branches) zabbix rpm from git.centos.org to gitlab.com/CentOS/infra/rpms/
      • rebuild it first on https://cbs.centos.org
      • redeploy a fresh .stg. zabbix server, on which we'll just import backup
      • Once fully validated, we'll be able to replay through automation for new prod instance (in RDU3)
