The MVP implementation for the Extension Catalog view re-used the OperatorHubTileView component due to time constraints. The ExtensionCatalog component should be updated to use the more extensible CatalogView component in the console-shared package. This work is not blocked by the OLM v1 API issues as we can just use mock data for development purposes.

AC: Extensions Catalog should use console-shared CatalogView instead of console's TileView component
