Currently CNV uses only a single subscription channel "stable" in order to keep things simple for the admin.

Where CNV requires manual modification to HCO during an EUS  (control-plane only) upgrade, perhaps this simplicity should be abandoned.

ODF also uses version specific channels: "stable-4.18" and their EUS upgrade path is different from CNV.

Suggestion:
Adopt version specific subscription channels, eg: "stable-4.18" "eus-4.18" to align with OCP and provide additional ways for the admin to specify what channel they would like to remain on.
