[EAP] - Cleanup and correct branch / tag values in override files

We need to perform a review of the current -override.yaml branch values for each of the -dev, -cp, -rel overrides and ensure the correct values are present.

Going forward, these files should be updated in -dev as upstream and merged into the other branches.
