[JDG] Incorrect Role Mapper environment variable name in yaml files

    Description

      The JDG image yaml files refer to an environment variable named CONTAINER_SECURITY_IDENTITY_ROLE_MAPPER however the scripts appear to use CONTAINER_SECURITY_ROLE_MAPPER.

      We need to fix the yaml files and documentation
