Support choosing hornetq-server in legacy CLI convenience commands

See parent task. The legacy high-level convenience commands for JMS stuff aren't critical, but people will use them and we should support letting users control the hornetq-server via a parameter. Right now it's hard coded to "default", which is a fine default.
