In the Arquillian Persistence Extension, it seems not to be possible to define a specific database schema to use for the test.
In DBUnit this could be achieved by creating a new org.dbunit.database.DatabaseConnection whereby you could provide the schema as second constructor argument.
It would be great, if such a possibility is available in Arquillian soon...
