The official documentation [1] states in 24.2.3 that:
"The queue’s dead letter address can be set with the setDeadLetterAddress() method."

However, this method is not exposed at all, at least not in hawtio. Other methods, such as sendMessagesToDeadLetterAddress(), are however exposed.

Not sure if it should be exposed, or if it is a documentation bug.
