Tekton files automatically created during branching after a release contains default values (see PR). This tekton file is incorrect and requires manual intervention (see PR) to set things such as hermetic to true and multi-arch builds. 

Ideally, the tekton file created should be a copy of the current one in the master/main branch, but with the updated versions.
