While the Elasticsearch backend for Hibernate Search would still work ok with the older versions of the Elasticsearch client, the version for the main one is a bit outdated compared to the one that is used by Hibernate Search 8.1 series that is currently in the WF preview. 

Let's add overrides for the `elasticsearch-rest-client` and `
elasticsearch-rest-client-sniffer` to match the versions required by Hibernate Search used in the preview.
