Upgrade Kafka Client to 3.1.0

https://github.com/wildfly/wildfly/pull/14953 which upgrades SmallRye Reactive Messaging to 3.13 and the Kafka Clients to 3.0.0 uncovered some problems in the Kafka client when running embedded Kafka on Windows.

The PR downgrades embedded Kafka to 2.8.1 along with the Kafka utils from Spring to 2.7.3.

Once https://github.com/apache/kafka/commit/145392b8c66cf5c351d11bc659a3fc80fc6b602a makes it into a Kafka release we should remove this commit and use 3.x of the Kafka client and 2.8.0+ of the Spring Kafka stuff.
