Update the Galleon layers docs to reference microprofile-opentracing instead of opentracing

In WF 22 we added a microprofile-opentracing layer as a quasi-alias for the 'opentracing' layer, whose name is inconsistent with the other MP layers. The Galleon layers table should reflect this.
