Allow override of the ui-proxy service account

The Service Account for the query component when using the OAuth Proxy is set to "%s-ui-proxy", which is created and managed by the Operator. However, the CRD allows a service account to be set to the query component. When this is set, we should use this value instead of creating and managing a "%s-ui-proxy" service account.
