Kogito-examples fail to build with Maven 3.6.3

The kogito-examples [1] bundled within [2] fail to build with Maven 3.6.3 because of probably undesired version property alignment [3] from <version.maven>3.6.3</version.maven> to <version.maven>3.6.3.redhat-00004</version.maven>:

The 7.11.0 Kogito artifacts do not contain this version alignment to productized version (a regression from 7.11.0).

The <version.maven> property is used for maven-enforcer configuration [1] thus forcing user to use Maven at least 3.6.3.redhat-00004.
