[Lightspeed] Update plugins in export-overlays repo

      After this discussion: https://redhat-internal.slack.com/archives/C04CUSD4JSG/p1772739728680389,

      we have decided to keep AI-Notebooks in the same plugins as Developer Lightspeed.

      Hence, we would need to update the Lightspeed image to include Ai-Notebooks functionality, and update the export-overlays repo to paint the full picture.
