Provide KCS input on how to migrate from Elasticsearch/Kibana to LokiStack/Console

For a considerable amount of time our new OpenShift Logging log storage/visualization has moved to LokiStack and OpenShift Console. We continuously are asked to provide supporting steps for our Support Engineers on how to migrate the services from the old stack to the new stack.

Goals:

1. Provide steps to safely disconnect Elasticsearch/Kibana from ClusterLogging
2. Provide steps to safely backup Elasticsearch/Kibana resources
3. Provide steps to safely switch to the new stack without disrupting the old steps

Non-Goals:

1. Provide steps to migrate data from one stack to the other
2. Enable ClusterLogging managing both stacks in parallel.

Stretch Goals:

1. Provide steps when using the ClusterLogForwarder opt-in capability to forward audit-logs to the default store migrating from ES to LokiStack.
