Stabilize a flaky test with SocketTimeoutException around KieServer

From time to time we get below error when executing "testExtraEndpoint" from "KieServerWithExtraEndpointTest" test class.

java.net.SocketTimeoutException: Read timed out

This is likely due to the environment where tests are being executed and their slowness, as current test is setting a timeout up to 1 sec.] We should increase, this timeout allowing up to 3/5 secs before raising a timeout socket exception.
