Karaf cxf-rest quickstart causes NPE after upgrading to use Swagger2

      I updated the redhat branch quickstart to use Swagger2, since it was having issues loading Swagger1 feature with Fabric8 cxf maven plugin built with Swagger2.
      The updated version is at https://github.com/dhirajsb/ipaas-quickstarts/blob/karaf-cxf-rest/quickstart/karaf/cxf-rest/
      The quickstart now starts without issues, but causes an NPE when using the first curl POST command from the README.md.
