Wrong path names generated from data type

Reopening issue: https://github.com/Apicurio/apicurio-studio/issues/570

The issue is closed but the problem remained.

OK: "beer" --> "beers"
OK: "man" --> "men"
NOT OK: "data2" --> "data2s" , should create without "s" (according to description in issue)
NOT OK: "BANANA" --> "bANANAS" , should create "bananas" or "BANANAS"
