Debezium Server might contain driver versions pulled from Quarkus

    Description

      This is a follow up to DBZ-4049. A pom was extended to override MySQL driver version that were pulled from Quarkus.

      We need to make sure there is not the same problem with other drivers.
      Also when Postgres was attempted to fix there was an issue with postgres tests running as part of debezium-sever workflow hanging.
