Db2: Replace `initial_schema_only` with `schema_only`

    Description

      1. Add schema_only option to SnapshotMode for Db2.
      2. Deprecate (or potentially out-right remove) initial_schema_only

      The DB2 documentation already seems to reflect this option only supporting initial and schema_only.
