Support delete propagation in end-to-end demo

The jdbc-sink service in the end-to-end demo does not support propagation of delete/tombstone events.
The JdbcSinkConnector did not add support for delete/tombstone management until 5.3, so the connector must be upgraded and reconfigured to enable this new behavior.
