Issue statement:
Customers and support are asking a lot of questions about the supportability of the CO operator. The CO (and so are FIO and SPO) is a rolling stream operator, as defined here:

According to the text on that page, only the latest version of the operator is supported at any given time and the customers are expected to upgrade to maintain support state of their environment, i.e. if they call in with a problem on an older version, the support should suggest them to upgrade as a first step:
cluster administrators should expect to continually validate Rolling Stream Operators and upgrade to the latest release, to maintain a supported state.
The ask:
The goal of this Jira is to add an explanation about the life cycle of each operator + provide the link to the life cycle, to reduce those questions and allow self-serve.
Release note seems to be the most appropriate place, since it also lists the latest version of the operator currently available.
